Nordic Rosemary and Blueberry Tart Recipe With a Personal Twist By Sarah Green

Greetings from my kitchen! I have always admired the simplicity of recipes that highlight fresh, natural ingredients, and this Nordic Blueberry is a great example of how to do it. This dish has an unexpected yet comfortable texture because of the delicate touch of rosemary, fresh blueberries, and rustic rye crust. It pays tribute to classic flavors while adding just enough contemporary flair to make it unique for every situation.

Make It Your Own

To give this dessert an extra bit of fun, I like to serve it with popcorn ice cream. The slightly salty, buttery ice cream adds a playful contrast to the tart’s creamy filling. Of course, you can enjoy this tart on its own—it’s delicious either way—but I love the way the ice cream brings a little bit of whimsy to the table. Whether you’re hosting a brunch, a dinner with friends, or just treating yourself, this tart is sure to impress.


The Recipe: Sarah’s Nordic Rosemary and Blueberry Tart Recipe

Step 1

Rye dough for Nordic Rosemary and Blueberry Tart Recipe With a Personal Twist By Sarah Green

Rye Base

  • 100g salted butter 

  • 50ml caster sugar 

  • 50ml dark brown sugar 

  • 1tsp of baking powder

  • 1/2 tsp of salt

  • 150ml of plain flour 

  • 150ml of rye flour 

Mix all the ingredients together until even dough, let it rest in the fridge at least 30minutes. 

Roll out to to a roughly 25cm tartlet tin and bake under baking beans for 15 minutes, 180c


Step 2

The Filling

  • 200g of blueberries 

  • 100ml sour cream 

  • 100ml double cream 

  • 2tbsp icing sugar 

  • 1tsp vanilla paste 

  • 1x egg 

  • 2x egg yolks 

  • 1x punnet of rosemary 

Soak the rosemary in the cream-sour cream mix over night, then sieve. 

Whisk all the ingredients together until well combined.

Place the blueberries on top of the baked rye crust and the cream mix over the blueberries. 

Bake in 160c for 25minutes until set. 

Allow to cool for couple hours. 

Perfect with home-made popcorn ice cream!
